Gyle 067 – Kernel IPA (Citra / Zeus)

Another Kernel IPA clone. Same base malt as last time but with Citra and Zeus hops. This will be our first time trying a step mash too but we’re staring off simple with just a single 10 minute protein rest at 50°C.

MALT:

Crisp Extra Pale Maris Otter – 5.5kg

HOPS:

Citra – 5g / 60 minutes

Zeus – 5g / 60 minutes

Citra – 10g / 15 minutes

Zeus – 10g / 15 minutes

Citra – 15g / 10 minutes

Zeus – 15g / 10 minutes

Citra – 20g / 5 minutes

Zeus – 20g / 5 minutes

Citra – 50g / Dry hop (day 5-7)

Zeus – 50g / Dry hop (day 5-7)

STRIKE VOLUME: 28.8 litres

TARGET VOLUME: 20 litres

PACKAGED VOLUME: 3x 5 litre kegs

ADJUNCTS: 1x Campden tablet, 9.2g Calcium Sulphate

MASH: 50°C / 10 minutes, 65°C / 60 minutes, 80°C / 10 minutes

BOIL: 60 minutes

YEAST: Mangrove Jacks M44 sprinkled on wort with oxygen

FERMENTER TEMP: 18°C

OG: 1.058

FG: 1.010

ABV: 6.3%

CARBONATION: 2.0 units
