Another Kernel IPA clone. Another 40 litre trial batch.

MALT:

Crisp Extra Pale Maris Otter – 12kg

HOPS:

Sorachi – 20g / 60 minutes

Sorachi – 40g / 15 minutes

Sorachi – 60g / 10 minutes

Sorachi – 80g / 5 minutes

Sorachi – 200g / Dry hop (day 5-7)

Sabro – 50g / Dry hop (day 5-7)

TARGET VOLUME: 40 litres

STRIKE VOLUME: 32 litres

SPARGE VOLUME: 6 litres

FERMENTER VOLUME: 40 litres

PACKAGED VOLUME: 6x 660ml bottles

ADJUNCTS: 1x Campden tablet, 17.3g Calcium Sulphate

MASH: 67°C / 60 minutes

BOIL: 60 minutes

YEAST: 2x Fermentis Safale US-05 sprinkled on wort with oxygen

FERMENTER TEMP: Way too hot. Ambient up to 27°C

OG: 1.070

FG: 1.008

ABV: 8.1%

CARBONATION: 2.0 units

BREWING NOTES: Water volumes all over the place. 12kg mash was a struggle. Massive temperature rise in the fermenter. Biggest headache was the dry hopping with the pellets refusing to drop out of suspension. Only got 6 bombers out of this batch.
