Gyle 094 – Now We’re Here

Habitus, winner of the 2014 World Beer Cup℠ in the Rye category, is a spicy, crisp, and extremely drinkable double IPA. We use loads of Sterling and Chinook hops in the kettle and hopback (and even more during the dry hop) for intense pine aromatics accentuated by a rye and 2-row malt base for a truly great IPA experience.

Crisp Extra Pale Malt (EBC 2.5-3.5) – 6kg

Crisp Rye Malt (EBC 22-32) – 1.5kg

Crisp Cara Malt (EBC 23-32) – 500g

HOPS:

Chinook – 100g / 90 minutes

Saaz – 20g / 45 minutes

Chinook – 30g / 30 minutes

Saaz – 50g / 15 minutes

Chinook – 65g / Whirlpool 30 minutes @ 75°C

Saaz – 80g / Whirlpool 30 minutes @ 75°C

Chinook – 50g / Dry hop after primary for 5 days

Sterling – 100g / Dry hop after primary for 5 days

TARGET VOLUME: 20 litres

STRIKE VOLUME: 33.2 litres @ 70°C

SPARGE VOLUME: 2 full kettles

FERMENTER VOLUME: 23 litres

PACKAGED VOLUME: 51x 330ml bottles

ADJUNCTS: 1x campden tablet, 1x protofloc tablet

MASH: 68°C / 60 minutes

BOIL: 90 minutes

YEAST: Mangrove Jacks M44

FERMENTER TEMP: 20°C, raise to 22°C, drop to 18°C

OG: 1.074

FG: 1.016

ABV: 7.6%
