Simpsons Finest Pale Ale Golden Promise (EBC 5.5) – 4400g

Crisp Maris Otter Malt (EBC 6) – 700g

Simpsons Black Malt (EBC 1700) – 50g

HOPS:

Fuggles – 40g / 90 minutes

East Kent Goldings – 30g / 30 minutes

Styrian Goldings (Celeia) – 50g / 5 minutes

HOP RATIO: g/l

IBU: 40

TARGET VOLUME: 23 litres

STRIKE VOLUME: 28 litres @ 69°C

SPARGE VOLUME: 6 litres

FERMENTER VOLUME: 20 litres diluted to 22.6 litres to reach correct OG

PACKAGED VOLUME: 1x 19 litre keg

ADJUNCTS: 1x Campden tablet, 1x Protofloc tablet, 1x Mangrove Jacks liquid finings

MINERALS: None

MASH: 68°C / 60 minutes

BOIL: 120 minutes

YEAST: Wyeast 1469 West Yorkshire Ale yeast with oxygen

FERMENTER TEMP: 20°C

OG: (1.046) 1.052 diluted with 2.6 litres to reach 1.046

FG: (1.014) 1.011

ABV: (4.3%) 4.6%

CARBONATION: Keg primed with 15g sugar

CONDITIONING TIME: 3 weeks.

BREWING NOTES: Slightly too bitter and needs more body. Natural carbonation and the LPG regulated supply didn’t really work. Kicked it up to 30 psi for 12 hours, dropped it to 5-6 psi and it was pouring perfect. Drop the black malt next time in favour of a 3 hour boil??
