Simpsons Finest Pale Ale Golden Promise (EBC 5.5) – 5000g

HOPS:

Fuggles – 35g / 90 minutes

East Kent Goldings – 30g / 30 minutes

Styrian Goldings (Celeia) – 50g / 5 minutes

HOP RATIO: g/l

IBU: 40

TARGET VOLUME: 23 litres

STRIKE VOLUME: 29 litres @ 69°C

SPARGE VOLUME: 5 litres

FERMENTER VOLUME: 19.5 litres (diluted with 2.5 litres)

PACKAGED VOLUME: 1x 19 litre keg

ADJUNCTS: 1x Campden tablet, 1x Protofloc tablet, 1x Mangrove Jacks liquid finings

MINERALS: None

MASH: 68°C / 60 minutes

BOIL: 120 minutes

YEAST: Wyeast 1469 West Yorkshire Ale yeast with oxygen

FERMENTER TEMP: 19°C

OG: (1.046) 1.052 diluted with 2.5 litres to 1.046

FG: (1.014) 1.012

ABV: (4.3%) 4.4%

CARBONATION: Keg primed with 25g sugar in boiling water

CONDITIONING TIME: 3 weeks.

BREWING NOTES: Kegged then hit with 20psi (purged 5 times) to seal. Mash a degree higher next time for FG. 22 litres in the fermenter was the perfect volume to transfer 19 litres to the keg with the long dip tube. Definitely needs the Simpsons Black Malt (EBC 1700) – 50g.
