Crisp Cara Malt – 800g

Weyermann Rye Malt – 800g

Crisp Medium Crystal (EBC 225-265) – 100g

HOPS:

Chinook – 30g / 90 minutes

Saaz – 60g / 90 minutes

Chinook – 25g / 45 minutes

Simcoe – 25g / 30 minutes

Chinook – 65g / 5 minutes

Saaz – 25g / 5 minutes

Amarillo – 30g / Dry Hop

Cascade – 30g / Dry Hop

Simcoe – 25g / Dry Hop

ADJUNCTS: 1x Campden tablet, 9.8g Calcium Sulphate

YEAST: Safale US-05

STRIKE VOLUME: 30.7 litres

MASH: 65°C / 60 minutes, raise to 80ºC mash out and hold for 10 minutes

BOIL: 90 minutes

FERMENTER TEMP: 18°C

OG:  1.070

FG: 1.014

ABV: 7.3%

CARBONATION: 2.0 units
